Pearse Lyons Distillery
at St.James Dublin
Founded by Dundalk-born Pearse Lyons, the Pearse Lyons Distillery at St. James was born out of a personal passion for brewing and distilling, an entrepreneurial spirit and a deep rooted family connection with The Liberties.
The boutique distillery features two unique copper stills, nestled in the sanctuary of the restored historic St. James’ Church. These stills produce a range of small-batch craft whiskeys which are aged in superior ex- bourbon casks. The whiskey produced at the Pearse Lyons Distillery uses our own yeast cultivated in-house and is aged in top-quality barrels sourced from our sister distillery in Kentucky.
Distilled with passion and inspired by tradition: Descending from six generations of coopers, Pearse Lyons’ ancestry is steeped in the traditions and heritage of Irish brewing and distilling.
